Cold Tacos
Cold tacos are really easy. They consist of chili with beans (ideally in the small cartons, not cans), sliced, individually wrapped cheese (Kraft), and tortillas.
All of these foods can forgo refrigeration on the trail . The beans, because they're canned. American cheese because cheese keeps well, and because it's well... very well processed to the point it's called a "cheese food product" (the cheese for a period, but I wouldn't go over 2 days, of course in 50F weather it'll keep longer).
Back in 2007 some chili manufactures released a new packaging for chili in which it was sold in cartons, slightly larger than the individual drinks normally put into lunch boxes. They were easy to open too (just tear open). The best part about them is that they were square, weight less than a tin can, and could easily be collapsed down and packed away.
Chili, when cold, sticks together pretty well, which makes it easy to apply in a taco. Just add some sliced cheese, and put a second tortilla below it to catch any drippings. This makes for a great trail meal: packs well, no dishes to clean, minimal trash, and a great source of protean and carbohydrates (one corn tortilla has as many carbohydrates as a slice of bread).
